With spring officially starting this Sunday our head chef Dane Watkins has been getting excited about all the seasonal produce he's going to be able to use in his kitchen.

So to celebrate we thought we'd take a look at five suggestions for dishes he could potentially cook up and add to his new spring menu using an ingredient synonymous with the time of year - Lamb.

This dish is a classic, and of all the dishes on our list something resembling this is most likely to appear on Dane's new menu.

The crumb offers a slightly contemporary twist on the classic roast lamb dish but it's still a British favourite.

This super quick recipe offers a casual way of serving up delicious lamb in an unconventional way, using classic flavour combinations.

It takes just ten minutes to prepare the dish and only 15 minutes to cook it and the combination of lamb and seasonal mint is made even better by the contrasting sweetness of a beetroot relish.

Barney Desmazery's recipe provides a Mediterranean twist on the British classic of roast lamb.

It only takes two hours to cook up too, so with spring in the air you could avoid spending too long slaving over a stove and make the most of the seasonal ingredients available.

While ingredients like Feta and olives aren't seasonal for a Cornish spring, new potatoes are - so there could be some elements of this dish getting served up at our restaurant near Fowey soon.

This recipe by Orlando Murrin takes around four hours to cook up, but it' well worth the rate for a Moroccan style dining experience.

The melt-in-the-mouth lamb dish is so tender you should be able to carve it with the back of a spoon.

However, since the stuffing uses ingredients including dates and olives it's unlikely to feature on Dane's seasonal menu!

This recipe from Jane Hornby is another which doesn't feature seasonal Cornish produce but it does look intriguing, so we thought we'd put it on our list for good measure.

It's easy to cook up, takes a relatively short time and is all done in one pot. The fragrant and filling one-pot supper also works well made with beef or chicken.
